Herbal medicine is the use of plants and plant extracts to treat disease. Herbalists argue that the mixture of chemicals in the whole plant work together to give a better effect (called synergy) than a single active ingredient.

Herbal medicine is the study of pharmacognosy and the use of medicinal plants, which are a basis of traditional medicine. There is limited scientific evidence for the safety and efficacy of plants used in 21st century herbalism, which generally does not provide standards for purity or dosage.

You can blend herbs together to make many different fragrances and flavors. Some of the most popular seem to almost compliment each other as well as the food we put them in. For some of us, natural is the way to go. With an endless supply of fresh herbs, which you can dry, there is no end to the mixes you can make for dips and salsas, or spreads and appetizers.

I have included some of my favorites to give you an idea of what you can do with the herbs you grow.

Taco Seasoning:

  • 2 teaspoons beef or chicken bouillon (use powder or granules)
  • 4 teaspoons cornstarch
  • 1/4 cup dried onion flakes
  • 4 tablespoons chili powder
  • 3 teaspoons ground cumin
  • 3 teaspoons dried garlic flakes
  • 2 teaspoons dried hot pepper flakes (optional)
  • 1-1/2 teaspoons dried oregano

Mix this all together. Store in a jar or storage bag until ready for use. Three tablespoons of this mixture added to one pound of ground beef plus one cup of water. Simmer until desired consistency. Salt and Pepper to taste.

Pumpkin Pie Spice:

  • 5 T. ground cinnamon
  • 2 t. ground nutmeg
  • 2 t. ground cloves
  • 4 t. ground ginger
  • 2 t. ground allspice

Use this for making pumpkin pies when ever it calls for pumpkin pie spice. Two teaspoons are sufficient for each pie.

Oriental Five Spice:

  • 1 tsp ground pepper
  • 1 tsp ground cloves
  • One tsp ground cinnamon
  • 1 tsp ginger
  • 1 tsp ground fennel

This is the main spice used in many oriental dishes. I use it in all my stir fry meals.

There are many dishes you can make yourself instead of buying the boxed version. Fresher is better every time. When you taste the recipe which you have made with your own natural herbs, you may never want to use the boxed stuff again.

One of the favorites for the whole family is an herb rice side dish. This is extremely easy to make. You just need to know the components. Well, here they are.

Herbal Rice Side Dish:

  • 1 lb long grain rice (I like half wild rice or brown rice)
  • 1 Tablespoon dried tarragon
  • One Tablespoon ground celery
  • 1 Tablespoon dried chives
  • 1/3 cup dried minced onion
  • 1/3 cup dried parsley
  • salt and pepper to taste

Mix all together and store in an airtight jar.
Bring 1 1/3 cup water to a boil. Add ½ cup rice mixture to boiling water. Simmer for 20 minutes. Fluff with a fork and serve.

This recipe is for making your own blend for Italian dishes.

Italian Seasoning:

  • 4 Tablespoons oregano
  • 4 Tablespoons marjoram
  • 2 Tablespoons savory
  • 4 Tablespoons basil
  • 2 Tablespoons rosemary
  • 4 Tablespoons thyme

Mix well and use as a seasoning in your pasta sauces. This is also great sprinkled on a pasta and tossed with a little virgin olive oil. You can make it a meal by adding 1 pound browned Italian sausage, 1 cup Parmesan cheese, and sauteed onions and green peppers. Kids love this combination. Make it a treat by adding pepperoni slices.

Aside from the fact that it’s really easy to make these, and that you’ll feel kind of like Martha Stewart when you do, there are some compelling health reasons to avoid pre-packaged spice mixes.

While you’d think spice mixes contained, well, just spices, in actuality there can be lots of other ingredients thrown in: modified food starch, partially hydrogenated oils, MSG, and other crazy chemical preservatives. No, thank you.

So, it’s easy; it’s healthier, and did I mention you’ll save money, too? You’ll be able to buy your ingredients in bulk, mix up the blends, and have enough to last for a Very. Long. Time. Or you might give some away as gifts!

Ready to do this? Of course you are!

First you’ll want to find a place to purchase your spices in bulk.

I love Mountain Rose Herbs for their quality herbs and spices. You can also find them at local grocers like Whole Foods and Earth Fare.

You’ll also need some jars.

Baby food jars are actually perfect, if you have them or know someone who does. Small canning jars work too, or you can actually order empty glass spice jars for a great price from various online outlets like Mountain Rose.

If you’ve got your set of measuring spoons ready, then you’re good to go!

For each of the following recipes, you simply combine the spices/herbs in the jar and shake to combine. I told you it was easy!

Homemade Seasoned Salt:

  • 8 Tbsp salt
  • ½ Tbps onion powder
  • 3 Tbsp pepper
  • ½ Tbsp garlic powder
  • 2 Tbsp paprika

Homemade Lemon Pepper:

  • 2 Tbsp lemon zest
  • 3 Tbsp ground black pepper
  • 1 Tbsp salt

Homemade Italian Seasoning:

  • 2 Tbsp dried thyme
  • 2 Tbsp dried marjoram
  • ¼ cup dried basil
  • 2 Tbsp dried rosemary
  • 2 Tbsp dried oregano
  • 1 tsp sugar
  • 2 tsp garlic powder
  • 2 Tbsp dried coriander

Homemade Poultry Seasoning:

  • 1 ½ tsp thyme
  • 1 tsp marjoram
  • ¾ tsp rosemary
  • 2 tsp sage
  • ½ tsp nutmeg
  • ½ tsp black pepper

Homemade Taco Seasoning:

  • 6 tsp chili powder
  • 4 ½ tsp cumin
  • 3 tsp onion powder
  • 2 ½ tsp garlic powder
  • 5 tsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp oregano

Note: You can use a little less of this than store-bought seasoning, as it is a bit more potent.

Homemade Pumpkin Pie Spice Mix:

  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 1/8 tsp ground cloves

Homemade Apple Pie Spice Mix:

  • 2 Tbsp ground cinnamon
  • ½ Tbsp allspice
  • 1 tsp nutmeg
  • 1 tsp ginger

Homemade Barbecue Rub:

  • ½ cup brown sugar
  • 1 Tbsp ground black pepper
  • 1 Tbsp salt
  • ½ cup paprika
  • 1 Tbsp chili powder
  • 1 Tbsp garlic powder
  • One Tbsp onion powder

Homemade Ranch Dressing Mix:

  • ½ cup dried parsley
  • 1 tsp garlic powder
  • 4 Tbsp onion flakes
  • 1 tsp paprika
  • 1 tsp onion powder
  • ½ tsp cayenne pepper

Homemade Cajun Seasoning:

  • 1 ½ tsp chili powder
  • ¼ tsp cayenne pepper
  • ¼ tsp pepper
  • 2 ½ tsp paprika
  • ¾ tsp thyme
  • ¼ tsp oregano

Homemade Curry Powder:

  • 3 tsp turmeric
  • 2 tsp coriander
  • 1 ½ tsp cumin
  • ¾ tsp dried mustard
  • ½ tsp cardamom
  • One tsp cinnamon
  • ½ tsp cloves
  • 1 tsp ginger
  • 1/8 tsp cayenne pepper
  • ¼ tsp ground black pepper

Homemade Chili Seasoning:

  • 1/2 cup chili powder
  • ¼ cup garlic powder
  • 3 Tbsp onion powder
  • ¼ cup oregano
  • 2 Tbsp paprika
  • ¼ cup cumin
  • 1 Tbsp thyme
